Black Gnat 

 

 • Marinated Smoked Trout • 

Cover fillets in salt and leave for 4 hours

Wash fillets thoroughly and dry

Marinate fillets in lemon juice and brown sugar over night.

Proportion the sugar to lemon juice according to taste.

Pat fillets dry with kitchen paper.

Smoke.
